Are these suitable for BJJ rolling or just striking arts?

They work well for BJJ drilling and no-gi training. The Lycra panels and side splits give you good movement. Keep in mind that the open splits can give an opponent something to grab during rolling — some BJJ practitioners prefer shorts without splits for sparring. For drilling and fitness, these are fine.

How do I choose the right size?
